Gluten free pancakes are the ultimate relaxing weekend treat. Today, we are here to talk about one pancake mix in particular and you will be pleased to know it is a beauty...the YesYouCan buttermilk pancake mix. Nothing beats a Sunday morning filled with golden pancakes that are smothered in maple syrup. We went one step further and made our own homemade salted caramel sauce and berry coulis, you can find the recipes for those delicious drizzles down below.
YesYouCan is one of two brands owned by SalDoce, a family owned food manufacturing company from Sydney. It could not be easier. Add water to the bottle and do the shake shake with all of your might, yeah baby! Perfect for those weekends away when the less ingredients and utensils you have to take the better!
We don't make pancakes very often as home. I was raised in a crepe family! But these were even easier to make than crepes, impressively easy. We even had some non-gluten free guests in the house to share the pancakes with us, one who isn't known for her culinary prowess but she took over at the stove while the photography was taking place and they were cooked to perfection. A sure sign of a quality product!
We wanted to impress so we made some of our own delicious sauces to serve with the YesYouCan buttermilk pancakes. Here are the recipes for a heavenly salted caramel sauce and a delectable berry coulis if you feel the need.
- 75g of butter
- 50g brown sugar
- 50g caster sugar
- 50g golden syrup
- 125ml cream
- 1 tsp sea salt
- In a saucepan place butter, sugars and syrup, swirl the saucepan frequently to combine.
- Add in the cream and salt, stirring often until the mixture is close to boiling, you will see a bubble or two but don't over do it!
- Remove from the heat and place in serving jug.
- 2 cups of frozen berries
- 1/2 cup caster sugar
- Place berries and sugar in a saucepan and simmer for about 10 minutes or until the berries are easy to mash with a wooden spoon.
- Run the mixture through a sieve and place in a serving jug.
The taste test
When I tasted the YesYouCan gluten free buttermilk pancakes I couldn't remember if pancakes ever tasted that good (I haven't had one for nearly two years), especially a pre-mix version! Everyone at the table agreed the end result was a delicious pancake, so perhaps my memory does not deceive me. The pancakes were spongy, the sweetness was subtle (some pre-mix gluten free pancakes don't need toppings they have so much sugar added to the mix) and with some yummy toppings they made a delicious breakfast.
YesYouCan buttermilk pancake mix is a great product. It is the best of the few on the market we have tried and it will be getting packed in our pantry stores for our next long weekend away.
