Easter is nearly upon us and we have some allergy free treats to share! A strawberry white chocolate rocky road and milk chocolate crackle that can both be gluten free, dairy free, sugar free and nut free. So take your pick of sugar free rocky road or our healthy take on chocolate crackle and let's get cooking!

Gluten free, dairy free, sugar free rocky road and chocolate crackle

Ingredients

White chocolate rocky road

  • 200g Sweet William no added sugar white strawberry chocolate
  • 1/2 cup coconut flakes
  • 1 packet of sugar-free marshmallows (approximately 75g), chopped in half
  • 80g pistachios (for a nut free version replace with 1/2 cup of seeds or puffed gluten free grain)

Milk chocolate crackle

  • 200g Sweet William no added sugar rice crackle milk chocolate
  • 1/2 cup coconut flakes
  • 1 cup puffed millet
  • 1 cup of mixed seeds (we used half pepitas, half sunflower)
  • 1/2 cup goji berries

Method

Gluten free, dairy free, sugar free rocky road and chocolate crackle

White chocolate rocky road

Line a 20 x 20cm cm tin with grease proof paper.

  1. Melt the chocolate in a bowl over a saucepan of boiling water or in the microwave.
  2. In a non-stick frypan, toast the coconut flakes until golden. Add the coconut, marshmallows and pistachios to the chocolate, mix well and evenly spread the mixture into the lined tray.
  3. Refrigerate until set, then cut into equal portions.

Milk chocolate crackle

Line a 20 x 20cm cm tin with grease proof paper.

  1. Melt the chocolate in a bowl over a saucepan of boiling water or in the microwave.

Store both the rocky road and crackle in the fridge as the chocolate is quite delicate.
