The banana and maple syrup work to naturally sweeten the nuts and seeds meaning this granola is a much healthier version than anything you might buy in a store.

Ingredients

  • 3 ripe bananas
  • 3 tbs maple syrup
  • 2 tsp coconut oil
  • 1 cup quinoa flakes
  • 1 cup puffed millet
  • 1 cup almonds
  • 1 cup sunflower seeds
  • 1 cup pepitas
  • 1/2 cup walnuts
  • 1/2 cup flax seed
  • 2 tsp cinnamon, ground

Gluten free banana maple granola

Method

Preheat the oven to 180°C and line a large baking tray with baking paper.

  1. In a large bowl mash bananas and stir in maple syrup and coconut oil until well combined. Alternatively use a hand mixer.
  2. Into the bowl add all the dry ingredients and stir thoroughly.
  3. Spread the mix evenly over the baking tray and place in the oven for 15 minutes.
  4. Remove from the oven and stir thoroughly to break up the large clumps of granola (otherwise you will have one huge granola bar!) and cook for another 15 minutes or until golden brown and dry.

Serve with you choice of milk and or yoghurt and fresh fruit for a delicious start to the day. This granola will keep for weeks in an airtight container in the pantry.
