We have created some gluten free fruit mince pies so the coeliacs and gluten free-ers don't have to miss out this festive season. These gluten free fruit mince pies have a moreish twist, they are filled with delicious, juicy cranberries!

Now, we think fruit mince pies are one of those love/hate relationships. Like vegemite. At Deglutenous we have a lover and a hater, so, when we produced these gluten free fruit mince pies, we made one that we were sure everyone would love (and we both certainly do). The peel is optional, the alcohol is subtle and the cranberries give a fresher festive flavour and becoming gooey texture. Bake these as your Christmas fruit mince pie of choice, but hide them, Santa won't be able to avoid sneaking a few, whether he is gluten free of not!

Ingredients

Fruit mince (with a cranberry twist)

  • 1/4 cup port or muscat
  • 50g brown sugar
  • 300g cranberries
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 75g currants
  • 75g raisins
  • Juice of 1 orange (peel can be used too if desired)
  • 1 tsp vanilla extract

Pastry

  • 200g butter, chilled and cubed
  • 140g potato starch
  • 120g rice flour
  • 160g fine polenta (cornmeal)
  • 110g castor sugar
  • 2 tsp xanthan gum
  • 1 egg
  • 2 tbsp water (if required)
  • extra rice flour for kneading

Method

Fruit mince (with a cranberry twist)

  1. In a medium saucepan over medium heat place the port and sugar, stir until the sugar is dissolved. Add the cranberries and cook until the liquid has been soaked up. Add spices, currants and raisins and combine thoroughly.
  2. Remove from the heat and add orange juice and vanilla extract. Leave the mixture to cool and move on to the pastry.

Pastry

Preheat oven to 180℃.

  1. In a food processor place butter and all dry ingredients, mix until a crumbly consistency.
  2. Place the mixture into a bowl, add the egg and mix slowly with a wooden spoon. Depending on the size of the egg you may need to add some of the water (sparingly and slowly) until the mixture forms big lumps.
  3. Flour a clean, dry bench using rice flour. Knead the dough into a ball with dry hands, then roll with a rolling pin until 3-5mm thick, depending on how you like your pastry. Cut out rounds using a cookie cutter to fit into a greased, patty pan tin.
  4. Using left over pastry pieces cut out shapes (i.e. stars, christmas trees, holy leaves) to decorate the tops of the pies.

Bringing it all together

  1. Spoon a heaped teaspoon of fruit mince into each pastry case and top with decoration pastry.
  2. Bake for 15 minutes or until golden in a moderate oven.
