You can make this gluten free breakfast dish in 15 minutes. Apart from the delicious and healthy quinoa there are so many whole food ingredients in here to give you all the energy you need to make it to lunch time.

Gluten free quinoa porridge

Ingredients

  • 1/2 cup quinoa flakes
  • 1 1/2 cup almond milk (any type of milk will work)
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1 tsp vanilla extract
  • 2 apples, coarsely grated
  • 1/4 cup linseed meal
  • 1/2 cup sultanas

Gluten free quinoa porridge

Method

  1. In a small saucepan, place the quinoa flakes, almond milk, stir constantly over high heat until the mixture begins to thicken. Keep an eye on it as it doesn't take long!
  2. Add in the spices and vanilla extract, mix well and when piping hot remove from the heat.
  3. Stir through the grated apple, sultanas and linseed meal.
  4. Serve into bowls to devour.

If you don't have quinoa flakes, you can use normal quinoa, just add an extra half a cup of liquid (water or almond milk) and cook for an additional 7 minutes or until the quinoa is cooked. Also feel free to vary the fruits, you could grate pear or chop up fresh peaches and mix with a variety of dried fruits, to experiment with flavours.
