3 rashers of bacon
1 onion, chopped
2 celery stalks, chopped finely
1 green capsicum, chopped finely
2 potatoes, peeled and diced
2 cups water
salt and pepper, to season
3 tbs gluten free plain flour
3 cups milk
400g corn, drained if from a tin
chives, finely chopped

Gluten free sweet corn chowder


  1. In a saucepan cook the bacon and onion until the onion becomes clear, then add the celery and capsicum and cook for 5 minutes.
  2. Add the potatoes, water and season to taste; leave to simmer for 20 minutes or until the potatoes are soft.
  3. Mix the flour with a little milk to make a paste before adding it to the saucepan. Bring the saucepan back to the boil and begin to add the milk gradually, stirring as it thickens but not allowing it to boil. Season to taste and serve with fresh chives.
