These delectable biscuits are flour and refined sugar free, not to mention paleo friendly. Now, we would not say any biscuit was healthy... but if something went close it would be this gluten free, paleo cookie delight!
This quick and easy gluten free recipe was modelled on some of the paleo versions we have seen of late. It is unlikely there was ever any biscuits in paleothic times but the base ingredients in the paleo lifestyle are great to adapt into a gluten free treat because those in paleothic times lived a gluten free lifestyle!
These biscuits are so quick to make you really need only set aside 10 minutes to prepare them plus they only need to bake for 8 minutes, it really is the epitome of simple and fast gluten free baking.

- 2 cups of almond meal
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/4 cup of maple syrup
- 1/4 cup of coconut oil
- 1 tbsp fresh mint leaves, finely chopped
- 1 tsp lime rind, finely grated
Preheat oven to 180°C.
- Line a tray with baking paper.
- Place all ingredients in a blender and pulse until it is worked into a dough.
- Roll teaspoon sized amounts into balls, place on the tray and bake for 8 minutes.
You can also flatten the biscuits if you prefer but by leaving them round you get more of the delicious soft centre.
Serve as a refreshing gluten free snack and keep it paleo with a piping hot herbal tea.
