You can't beat a prawn and green mango salad in summer, this one is perfectly gluten free too!

One of the most fabulous people in my life also happen to make the most fabulous green mango salad. It was this fabulousness that inspired this summer, Thai style, prawn and green mango salad.

The flavours are so fresh and delicious, the perfect blend of sweet, sour and salt - as the perfect Thai dish should be. You can't go past this for a starter on Christmas day or just as a delicious salad, for the middle of the table with lunch. It will be devoured in minutes.

Delicious Thai inspired prawn and green mango salad

Ingredients

  • 2 large red chillies, finely chopped
  • 4 tbs fish sauce
  • 2 tbs sugar
  • 2 limes
  • 300g baby spinach
  • 100g bean sprouts
  • 150g snow peas, chopped thinly lengthways
  • 2 green mangoes, thinly sliced
  • 2 tbs coriander, finely chopped
  • 1 tbs mint, finely chopped
  • 500g of green prawns, shelled and cleaned
  • 2 tbs olive oil
  • 2 large red chillies, finely chopped
  • 4 cloves of garlic, peeled and crushed
  • 4 tbs peanuts, roughly chopped (optional)
  • additional coriander leaves for garnish

Method

  1. To make the dressing, combine two chopped chillies, fish sauce, sugar and juice of two limes in a small jug and stir until the sugar is dissolved.
  2. Combine baby spinach, bean sprouts, snow peas, green mango, mint and coriander in a large bowl and toss well.
  3. Place the olive oil in a frying pan over medium heat, add the garlic and two chillies, sauté for 5 minutes and then add the prawns, cooking for 10 minutes or until pink.
  4. Add the dressing and prawns to the salad and toss well. Sprinkle with peanuts and coriander leaves.

If you want this to look more special you can plate up each salad in a stack as we did in the photo. Starting with the spinach, then adding the bean sprouts, snow peas and mango. Top with the prawns and sprinkle herbs liberally before pouring the dressing over and finishing with peanuts and additional coriander leaves.
