These gluten free raw lemon and coconut balls are a sweet treat but they are still full of goodness. Eating gluten, grain and dairy free whole foods all the time can leave you craving a treat occasionally, so we decided to create something small we could have when we felt a craving advancing. It was necessary! We both fell off the bandwagon this week in the name of a treat. We are back on track now, with these tiny, yummy morsels. There really is bliss in every bite! Not to mention the fact they are packed full of nutritional goodness.

Delicious gluten free raw lemon coconut balls

Ingredients

  • 1 1/2 cups dates
  • 1 1/4 dried coconut, shredded
  • 1 lemon, zested and juiced
  • 1/2 tbs vanilla extract
  • 1/2 tsp salt
  • 1/2 cup almond meal
  • 1/3 cup linseed meal
  • 2 tbs chia seeds

Method

  1. In a blender place the dates, lemon zest and coconut, blend until the mixture is finely chopped.
  2. Add the lemon juice, vanilla and salt, buzz to combine. Then add the almond meal, linseed meal and chia seeds and blend until well combined.
  3. Use your hands to form the mixture into balls. We used a heaped teaspoon as a measure for each ball.
  4. If you want you can coat the balls in dried coconut, desiccated will stick best.
