deglutenous recently returned from a trip to Europe, last stop Italy. We tried very hard to find gluten free gnocchi with pesto but it proved harder than expected so naturally it was the first thing we decided to make when we returned to Australia. It was a quick throw together meal so we bought the gnocchi but the pesto was certainly homemade. Naturally gluten free and delicious pesto can be used in many different ways, as a dip, a dressing, a marinade or most importantly as a pasta sauce! This pesto is made using pistachios which give a finer texture than pine nuts and a more delicate flavour.
- Preparation time
- 10 minutes
- 2 cups fresh basil
- 1 cup shelled pistachio nuts
- 3 cloves garlic
- 2/3 cup olive oil
- 1 tsp lemon zest
- 1/4 cup grated parmesan cheese
- Place all ingredients in a food processor and puree until smooth
- Add more olive oil to make the pesto the required consistency, for example if you are using it as a dressing you might like it to be more liquid than if you want to use it as a dip.
As you can see it comes out a beautiful rich green and tastes divine. Serve as a dip as is with plain crackers or chips or add a little more oil and stir through some gluten free pasta or gnocchi for a quick and delicious gluten free meal. Buon appetito senza glutine!
