These gluten free zucchini fritters are just delicious for a light dinner. We created this take on gluten free zucchini fritters while trying to live paleo, which was a lot of fun and perfect for us, as it is a gluten free diet. We even decided to get creative one night and concoct this delicious gluten fee meal, we substituted flour with almond meal and used pumpkin to give it some bulk and served it with homemade guacamole for a good dose of healthy fats and even more gluten free deliciousness.

Ingredients

Zucchini and pumpkin gluten free fritters

  • 1/2 a butternut pumpkin (peeled, seeds removed and grated)
  • 2 zucchinis (grated, and squeezed to remove excess water)
  • 1/2 cup of almond meal
  • 2 eggs (lightly beaten)
  • Salt and pepper to season
  • Olive oil to cook

Guacamole

  • 2 avocados
  • 1 chilli (chopped)
  • 1 clove of garlic (crushed)
  • 1 tbsp lemon juice
  • Salt and pepper to season

Method

Zucchini and pumpkin gluten free fritters

  1. In a bowl combine all the ingredients and season with salt and pepper (ensure the zucchini is well squeezed otherwise the mixture will be too watery).

  1. Heat olive oil in a pan and use approximately two tablespoons of mixture to make one fritter. Brown well on both sides then turn down the heat to cook them through.

Guacamole

  1. Peel and deseed the avocados, mash well with a fork and stir through chilli, garlic and lemon juice. Then season to taste.

Serve fritters on a plate with a generous dollop of guacamole. They are also very yummy with our fresh prawns with chilli greens.

A good variation although not necessarily paleo (depending on your position) is to use a large sweet potato in place of the pumpkin.
